Oil-Free Sugar-Free Banana Granola
INGREDIENTS
- 1 ripe banana
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- ⅓ cup shredded coconut (unsweetened)
- ⅓ cup chopped nuts
- ¼ cup of dried fruit (optional)
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of salt
- ½ cup of maple syrup/honey
INSTRUCTIONS
- Preheat the oven to 330°F (165°C). Line a large baking tray with non-stick paper.
- Mash the banana thoroughly in a large bowl, add the honey.
- In a separate bowl mix in the cinnamon, vanilla extract and salt. Add the oats, shredded coconut, nuts and dried fruit. Mix until well combined.
- Pour banana and honey mixture over the dry mixture and stir until fully mixed.
- Transfer the mixture to the baking tray. Bake for 30-40 minutes, mixing it around with a fork every 10 minutes . Once finished, allow the granola to cool.
- Once cooled, store in an airtight container.
